Today’s post is a slightly different one from my crafts and travels, but not totally unheard of on Aimsy’s Antics. Today I bring you a truly yummy and easy recipe to have a go at making…Banana muffins with cinnamon and ginger!

So, there is a bit of a trend at the moment of making banana bread. I’m not 100% sure why it has been such a big hit during this lockdown period, maybe because it is a good way to use up old bananas? I thought I would join in on the trend, one because who doesn’t love jumping on a bandwagon, and two because I had three very ripe bananas that were way past their best for eating.

Banana Muffins with Cinnamon and Ginger:

Instead of making the traditional banana bread/loaf, I thought I would have a go at changing the recipe up. That is when the banana muffins idea was born. But I didn’t just want to make bog standard banana muffins, I wanted there to be a bit of something else to it, which is where I settled on adding the spices of cinnamon and ginger. These spices just add a bit of something else and a kick to these yummy muffins. Also, because of the current situation, most of these ingredients were already in the cupboards, so no need for an extra outing to the shops!

You can add other ingredients to the muffins instead of cinnamon and ginger, such as chocolate chips, blueberries or even dried fruit for a different taste too. Check out my friends over at The Grumpy Olive for a delicious banana bread recipe too!

What you need:

To make these yummy banana muffins with cinnamon and ginger, you are going to need the following ingredients:

  • 1 &1/2 cups (approx 192g) of plain flour
  • 3 large ripe bananas
  • 1/2 cup (approx 64g) of caster sugar
  • 1/3 cup (approx 70ml) of vegetable oil
  • 1 egg
  • 1tsp baking powder
  • 1/2tsp bicarbonate of soda
  • 1 tsp vanilla essence or extract
  • 1tsp ground cinnamon
  • 1tsp ground ginger

Step 1 – Mash the bananas:

First of all, you need to preheat your oven. Set the oven to Gas Mark 7 or 425°F and move on to the first part of the recipe.
Mash those really ripe bananas. The riper the better for this recipe, as they will mush so much easier. You can use a fork as I did, or use a potato masher. It doesn’t really matter as long as it is a utensil that can really mash up the banana. You want them to go semi-liquid from all the mashing.

Step 2 – Add sugar, egg, oil & vanilla:

Once you are happy that the bananas are really mashed, you want to begin adding in a few of your ingredients. As the bananas are quite fluid at this time, this part of the recipe is like combining all of the wet ingredients as you would in any other baking recipe. Add the sugar, oil, egg and vanilla to the banana in a large mixing bowl.

Stir these all together until they combine. Again, this part of the mixture will look really runny. That’s how we want it for now.

Step 3 – Add in the dry ingredients:

Now, it is time to add in your dry ingredients. Start by sifting in the plain flour, folding this into the liquid one bit at a time until all the flour is mixed in fully.
Then, you want to begin adding in the cinnamon, ginger, baking powder and bicarbonate of soda. Add these in separately, stirring and combining fully before adding in the next ingredient.

We are adding in both baking powder and bicarbonate of soda, to really give the muffins a fluffy texture and to help them rise.

Be careful not to over stir the mixture, as this can ruin the batter. You want to make sure everything is fully combined but not overmixed.

Step 4 – Set batter aside for approx 15 minutes:

Once the batter for the banana muffins is complete, you want to set this aside in the mixing bowl for a minimum of 15 minutes. This will allow the mixture to rest slightly, and act as a bit of proving (similar to bread). So, cover the bowl with a clean tea-towel and get busy doing something else for at least 15 minutes.
Side note: I bought this tea towel on my trip to Lisbon.

Step 5 – Spoon into muffin cases and bake

After the muffin batter has rested for the 15 minutes, it is time to spoon them into the waiting muffin cases. I used large bun cases and placed them in a muffin/Yorkshire pudding tin. You want to fill the muffin cases to the top but not overspilling. This is slightly different from how you would bake buns/cupcakes.

Bit of a top tip – Using an ice cream scoop gives you a bit more control when placing the batter into the cases.

Once you have filled your muffin cases, it is time to bake the muffins. You want to place them in your pre-heated oven at the higher temperature of gas mark 7 or 425°F for approximately 7 minutes. I set an alarm so that I didn’t bake them on high heat for too long. The higher heat just helps the muffins form into muffins!

Then you want to reduce the heat to a gas mark 5 or 375°F for a further 15 minutes, or until they are slightly golden. You can use a toothpick to check whether they are fully cooked, by sticking this in the middle of the muffin. If the toothpick comes out clean then the banana muffins are ready, if you get a bit of gooey batter on the toothpick, then the muffins need a little longer in the oven.

Step 6 – remove and allow to cool

When the banana muffins are cooked, remove them from the oven. Be careful not to squish the muffins, remove them from the hot tin and place them onto a cooling rack. Allow them to cool completely before enjoying.

  3. These look incredibly delicious! I’ve been making so much banana bread recently I think I’ve really perfected the recipe but I love the idea of throwing in some cinnamon and ginger!! Also, muffin size might stop me from eating the whole thing haha oops.

  9. Nice recipe! I love that you added ginger. Ginger and bananas are both great for gut health. Ginger to help with digestion and bananas contain prebiotics, which is food for the good bacteria in the gut.

  12. I think it has something to do with being at home all the time and having a lot of free time which can be used to bake apparently lol. These awesome and tasty muffins but haven’t tried them with cinnamon ginger. Might give it a try, thank you for sharing it.
