Looking to have a tasty snack this Christmas? Then, look no further than these three recipes for homemade roasted almonds. The best snack to have or give away as gifts.

Is there anything better than a tasty snack at Christmas? One for eating in between that Christmas and New Year period, or even to give away as a gift in a hamper. Well, in today’s post I am going to show you how to make the best homemade roasted almonds. There is something for everyone; chilli and lime almonds, smoked paprika almonds and sugar-cinnamon almonds.

Homemade Roasted Almonds

As I said, these are perfect to keep for yourself or to give away as gifts. For the past few years, I have made the sugar-cinnamon roasted almonds, and they have gone down a storm. I thought adding in a few more flavours would make the perfect addition to the gift food hampers. They also go perfectly with other handmade goodies, such as Rhubarb and Ginger Jam and Cranberry and Red Onion Relish.

So without further ado, let’s get into the first homemade roasted almonds recipe!

Homemade Roasted Almonds

Homemade Roasted Almonds – Chilli & Lime

The first in the three recipes is a spicy tangy version, combing the heat of chilli with the zing of lime. Now, this recipe is perfect for those who enjoy the spice, and if not, the amount of chilli can be reduced for a slight kick rather than a punch.
To make the Chilli and lime almonds you will need the following ingredients:

What you need:

  • 1 bag (200g) Whole Almonds
  • 2 Tbsp Lime Zest
  • 2 Tbsp Lime Juice
  • 1 Egg White
  • 2 Tsp Cayenne Pepper
  • 1 Tsp Dried Chilli Flakes
  • 1 Tsp Garlic Salt
  • 1/2 Tsp Salt

Step 1 – Add Ingredients together

The first thing to do is to prepare some of the ingredients. Zest one and a half limes, followed by juicing these. This should give you enough for the roasted almonds. You also want to pre-heat the oven on a gas mark 4 or 180°C, as well as line a baking tray with baking paper.

In a large mixing bowl add in the egg white. Give this a quick whisk before adding in the lime zest and juice. Again, whisk this, until the egg whites and juice go a little foamy. You don’t want peaks, but the mixture to thicken slightly.

Next, add in the remaining spices of dried chilli flakes, cayenne pepper, garlic salt and regular salt. Whisk everything together until fully combined.

Step 2 – Add in Almonds

Once the ingredients have been mixed together, it is time to add in the almonds. Make sure these almonds are whole and have the brown skin on. These give the almonds extra crunch and tastiness, as well as having the nutrients of the almonds.

Give the almond mixture a thorough mix, ensuring all the almonds are coated in the chilli and lime goodness.

Step 3 – Bake the almonds

Place the newly made almond mixture onto the prepared baking tray. Spread the almonds out evenly on the tray, making sure they are as flat as possible.

Then, place into the oven and bake for approximately 30 minutes. Remove around halfway through to mix the almonds to make sure they are baking/drying out. You are looking for the almonds to appear dry and really make sure the egg white has cooked thoroughly.

Remove from the oven when done, and allow to cool. Testing the almonds is an obligatory step in this too! You can either keep for yourself or place into little gift bags to give away as gifts. Store in an airtight container and they should last for around 2 weeks. If you are making as a gift for Christmas, I would advise making as close to the gift-giving date as possible, so that they are as fresh as possible for the receiver.

So there is the first recipe complete of the homemade roasted almonds.

Homemade Roasted Almonds – Smoked Paprika

This next recipe encapsulates the smokiness of smoked paprika, with the additional sweetness of honey. This one is best for those who like a bit of spice without the overwhelming heat of the chilli. Think Spanish tapas vibes.

To make the smoked paprika almonds, you are going to need the following ingredients.

What you need:

  • 1 bag (200g) Almonds
  • 1 Egg White
  • 2 Tbsp Honey
  • 1 Tbsp Olive Oil
  • 1 Tsp Smoked Paprika
  • 1/2 Tsp Paprika
  • Sprinkle of Sea Salt

Step 1 – Combine Ingredients

Like the first recipe, you want to make sure the oven is pre-heated. Also pre-line a baking tray with baking paper and set aside.

Then, add in the egg white to a large mixing bowl. Whisk the egg white until it thickens slightly and becomes foamy. Then add in the olive oil followed by the honey. I find that adding the honey after the oil helps the honey slip off the spoon easier. Next, add in the smoked paprika and regular paprika.

Use a whisk to mix everything together thoroughly. The mix will appear slightly runnier than the first recipe.

Finally add in the bag of almonds, again mixing them in thoroughly. Make sure the almonds are fully coated in the sweet paprika sauce.

Step 2 – Bake the Almonds

Place the almond mixture onto the pre-lined tray and spread out evenly. Sprinkle over a pinch of sea salt over the tops of the almonds.

Then pop it into the oven, again for around 30 minutes to 1 hour. Mix the almonds every 15 minutes or so to help bake the sauce. You will see the sauce begin to thicken and go a darker red colour. The almonds should be drying out with little sauce left, however, be careful not to over bake them causing them to burn.

Remove them from the oven and allow to cool. The almonds may be a little sticky when first removed from the oven, however, this will harden up a little and be less sticky.

Then the smoked paprika roasted almonds are complete and ready to enjoy! Again, these will keep for around 2 weeks if kept in an airtight container.

Homemade Roasted Almonds – Sugar Cinnamon

Now, for the final homemade roasted almonds recipe. This one is perfect for those with a sweet tooth. They also totally bring the vibe of roasted nuts from a Christmas market, what’s not to love? They combine the sweetness of sugar with the Christmas spice of cinnamon.

You will need the following ingredients to make these delicious almonds.

What you need:

  • 1 bag (200g) Whole Almonds
  • 1 Egg White
  • 1/2 cup (approx 100g) Brown Sugar
  • 1/2 cup (approx 100g) Caster Sugar
  • 1 Tbsp Ground Cinnamon
  • 1 Tsp Vanilla Extract
  • 1 Tsp Salt

Step 1 – Mix Ingredients

Pre-heat the oven and line a baking tray with baking paper like the previous two recipes.

Then place the brown sugar, caster sugar, cinnamon and salt into a large mixing bowl. Mix together and remove any lumps that may be in the sugar. In a separate bowl place in the egg white and vanilla extract. Whisk together until the mixture becomes thicker and foamy.

Next, add the egg and vanilla mixture to the sugar-cinnamon mixture. Whisk both together to combine. You will find that the mixture clumps together and then thins out into a slightly runny paste. This mix will be the thickest out of the three recipes.

When fully combined, add in the bag of almonds and mix thoroughly. Make sure all the almonds are fully coated in the mixture.

Step 2 – Bake the Almonds

Then, scoop the mixture out onto the baking tray. You may find that there looks like there is too much mixture to almonds, but the mixture does thicken and harden perfectly on the almonds.

Place the tray in the oven and reduce the heat setting to the lowest possible. This will bake the almonds slowly and help even cooking of the mixture. It will also help obtain the yummy caramel type flavouring to the almonds too. Because the heat is lower, these may take over an hour to fully bake. Again, make sure to mix the almonds every 15 minutes or so to help the mixture bake evenly and become crunchy. It may look a bit like meringue cooking.

When ready remove from the oven and allow the almonds to cool. This will help the sugar-cinnamon to harden even more so. Then the sugar-cinnamon almonds are ready to be snacked on or bagged up as a gift.

  1. I don’t like almonds, but my boyfriend does. The last time we went to the mall they were selling roasted almonds & he wanted some, but I told him no so I should make him the sugar cinnamon ones!

    1. You could totally change these up for other nuts that you may like. I was eyeing up cashew nuts but settled on almonds in the end.

  3. The cinnamon ones look amazing!! I will save this recipe because they had ones like that at the German Christmas markets last year and I won’t be able to go this year so it will be nice to bring the markets to me by making these! 🙂

  6. These sound AMAZING! I am a huge fan of roasted almonds, but the idea of making my own (rather than just buying them pre-roasted) sounds like a fun. After all, we’re all spending a little more time doing things like trying new recipes during these lockdowns, right? lol
