
Another week, another baking recipe for you! In this week’s post, I am embracing the celebration of St Patrick’s Day by doing some Irish inspired baking. That’s right I will show you how to make Guinness brownies with a Baileys ganache topping. Getting into the St Patrick’s day spirit in more ways than one!
I love using ingredients that you wouldn’t necessarily add in baking, like using dandelion and burdock or even my recent rose and pistachio bake. So, today’s bake is no different with the added richness of Guinness stout and smoothness of Baileys for a topping. Both combine well to make truly scrumptious, fudgy Guinness brownies with a Baileys topping. What’s not to love?
Originally I was going to have a go at making a Guinness cake but thought it would be good to try something different. If you are thinking of baking a Guinness cake, then I can wholeheartedly recommend Nigella Lawson’s version. It is just delicious, and Nigella is the queen of rich and yummy recipes, isn’t she?
Brownies are a yummy treat to have, and with the added stout of Guinness, even better. A little history on brownies; they are a form of cake without the rising agent of baking powder. Baked to be thicker in density with the deliciousness of chocolate. Traditionally chocolate makes up the base, however other ingredients can be added to add a difference to the chocolate. Nuts, fruit, chocolate chips, you name it! You can make brownies without chocolate, or with white chocolate to make them blondies. In either form, they are just a lovely treat, snack or even dessert.

Guinness Brownies
Adding Guinness to the brownies really enhances the chocolate and richness to them. A perfect combination. Now, you may be thinking, but “I don’t like Guinness”. Well luckily for you with the chocolate content and the Baileys ganache topping, the taste of Guinness does not come through. You can tell something different is added to the brownies, but the Guinness taste does not come through strong, just enhancing the chocolate goodness.
Then there is the delightful topping…chocolate ganache with the hint of Baileys. Absolutely delicious. You get the taste of Baileys with the smoothness of the chocolate. These really add an extra level to the brownie. What is best, you can use this ganache for toppings or fillings for other baked goods. I love being able to use parts of recipes for other bakes, it just makes the creation more creative!
Both go hand in hand and complement each other so well. What’s more, they are perfect for making to celebrate St Patrick’s day and bring in that bit of Irishness. Even better if you can use Irish butter in the bake too!

So without further ado, here is how to make these delicious Guinnes borwnies with Baileys ganache topping.
There is an added cocktail recipe in the video too, that isn’t included in this post!
What you need:
To make these yummy brownies, you will need the following items:
- A can or bottle of Guinness
- 175g Butter
- 226g Chocolate – I use a mix of milk and dark chocolate
- 250g Granulated Sugar
- 3 Large Eggs
- 125g Plain Flour
- 1tsp Vanilla Extract
- 1/2tsp Salt

To make the ganache, you will need the following:
- 150g of Chocolate ( I use a mix of milk and dark)
- 80ml Double Cream / Heavy Cream
- 100ml Baileys/ Irish cream (I use Aldi’s version)

- 9 X 9 Baking tin*
- Mixing Bowl
- Saucepan
- Whisk*
- Spatula*
Step 1 – Start making the Guinness Brownies:
The first step to do is begin making the brownies. First, line a 9 x 9 baking tin with greaseproof paper. This will make it easier to remove the brownie from the tin when finished. Then, preheat the oven to a gas mark 4 or 350°F/117°C.

Then, open the can or bottle of Guinness and place it into a saucepan. Begin heating and allow the Guinness to come to a boil. Once it reaches a boil, allow it to simmer and reduce down. This should take around 20 minutes to reduce and should reduce about 2/3 of the pan. We will be using 114ml of this in the brownies, so there is a little bit of wastage. Check out this recipe by The Recipe Wench for some idea of what to do with the leftover Guinness.
Remove from the heat and allow the Guinness to begin cooling.

Step 2 – Create the Brownie Mixture
Using a mixing bowl over a pan of hot water (ban-Marie style) add in the butter and chocolate. Allow both to melt together, until smooth. When all is melted, remove the bowl from the heat.


Next, add in the sugar, whisking the mixture together. The sugar should combine with the butter and chocolate, dissolving in. Then, grab the cooling Guinness (114ml) and add it into this mixture, again mixing until fully combined. The mixture will appear quite runny at this point, which is how it should be.

Crack your three eggs and add them into the mixture, whisking these in, again until fully combined. I crack my eggs straight into the brownie batter, however, if you are a bit clumsy (like me), then it may be best to crack the eggs into a separate bowl. That way, it will be easier to remove any shell that may drop in.
Grab the flour and use a sieve to add this into the batter. This will hopefully remove any lumps, bumps and impurities of the flour. Mix this in. Ideally use a spatula at this point and use a folding method, I used a whisk for this part though.
Add in the vanilla extract and salt next. Again mix it all together, with the brownie mix looking shiny and thick (and just scrummy!)

Step 3 – Bake the Guinness Brownies
Pour the brownie mixture into the prepared baking tin, tapping the tin slightly to help release any air bubbles. Place it in the pre-heated oven for around 30 minutes. Remove partway through cooking and tap the tin again. This is supposed to release more air bubbles and cook the brownies more even. Use a skewer to determine if the brownie is fully baked. The skewer should come out clean.
Remove from the oven when done, and allow them to cool. You can remove them from the tin to allow them to fully cool, replacing them when they and the tin are cool to add on the yummy ganache.


Step 4 – Make the Baileys Ganache
Begin making this ganache once the brownies are fully cool, otherwise, the ganache will just stay runny for a lot longer.
In a pan add the double cream and baileys, gently heating until it comes to a boil. Prepare the chocolate in a separate mixing bowl. When the cream and Baileys mixture is boiling, remove it from the heat and immediately pour it over the waiting chocolate. Then, leave it for around five minutes…don’t touch it. The cream and baileys will gently melt the chocolate. Once it looks like the chocolate is melting fully, then use a whisk to mix it all together. The mixture will thicken, look smooth and glossy with no lumps of chocolate visible.



Step 5 – Add to the Guinness Brownies
Then replace the Guinness brownies back into the baking tin (should be cool) if you removed them, and pour over the newly made ganache. Spread this out evenly over the whole top of the brownies. Let these sit and cool, popping them into the fridge should quicken the process. The ganache will set slightly, but still, be slightly gooey. It will not fully set.

Remove the brownies from the tin, and cut into small bites or big slabs…whatever you fancy! Then the Guinness brownies with Baileys topping are complete and ready to be enjoyed! I’ve added an Irish coffee espresso martini cocktail with mine, which you can see in the video version of this post. Warning though, it is a strong one!

Guinness Brownies with Baileys Ganache Topping
Equipment
- Mixing Bowl
- Saucepan
- Oven
- 9 x 9 Baking tin
Ingredients
Guinness Brownies
- 1 can Guinness Stout
- 175 g Butter
- 226 g Chocolate dark and milk

Baileys Ganache Topping
- 150 g Chocolate Milk and dark
- 80 ml Double Cream
- 100 ml Baileys Irish Cream
Instructions
Make the Guinness Brownies
- Line baking tin with greasproof paper and preheat the oven to gas mark 4 / 350°F / 117°C
- Place the can of Guinness into a saucepan and bring to a boil. Then, allow it to simmer until it reduces approx 2/3 of the amount. This can take around 20 minutes to do. Then set aside and allow to cool. You will be using 114ml of the Guinness in the Brownies.
- Create a double boiler / ban-Marie / Place a mixing bowl over a pan of water and place int he butter and chocolate. Allow them to melt together until smooth and remove from the heat.
- Next, add in the sugar and whisk together, followed by the 114ml of Guinness until fully combined. Follow this by adding in the eggs, again mixing in fully. Sift in the flour, folding this into the mixture and finally add in the vanilla extract and salt. The brownie batter should look shiny, thick and smooth.
- Pour into the prepared baking tin, and tap the tin gently a few times. Place into the oven and bake for approx 30 minutes, checking if the brownie is baked. Use a skewer in the middle and if it comes out clean, then the brownie is ready. Be careful as the brownie bakes very quickly towards the end!
- Remove from the oven and allow to cool fully before adding on the Baileys ganache topping.
Making the Baileys Ganache Topping
- In a saucepan, place the double cream and Baileys Irish Cream and allow to heat until boiling.
- In a separate mixing bowl, place the chocolate into small chunks. When the Baileys and cream are boiling, remove from the heat and immediately pour over the chocolate. Leave the chocolate to melt for approx 5 minutes.
- Whisk the cream and chocolate mixture until it becomes smooth and shiny, with no lumps of chocolate left.
- Pour the ganache over the cooled brownies, spreading it evenly over the top. Place into the fridge to cool and set slightly. The ganache will never fully set but will stay in place.
- Cut the brownies into bite-size pieces or larger slabs and enjoy!

I have to admit I have never tried Guinness but these brownies sound amazing! I will definitely be trying these out!

Oo, I love the fudge-y looking texture of these brownies! I have never tried Guinness in a brownie, but I love the texture and flavor it adds to cake so I have to try these. Excited by the frosting too; I have Bailey’s on hand and who does not love that in frosting??

They sound so interesting! I’ve never liked Guinness so I would never think to bake with it but the texture of these looks so good. You’ve just given me so many ideas.
I don’t know if it is the ingredients in the Guinness of the slight fizz to it, but it definitely helped the texture of the brownies! and the bonus is you can’t really taste it either. Glad you like them, looking forward to seeing what you create!

These look so delicious! I’ve never has Guinness, so I don’t know what it would taste like in a brownie. I do, however, love Baileys so this seems like the perfect brownie for me. Do they taste really boozy? Thanks for sharing this recipe. I think I’m going to need to get baking!

The Guinness just gives the chocolate richness rather than tasting of Guinness, I think, anyway! The more boozy tasting part is the topping, as I think you can really taste the baileys, but deffo in a good boozy way. It’s not too overpowering!
