I am bringing you a baking recipe today, and one that is truly scrumptious! See how to make the best Biscoff spread flapjacks, that are super tasty and delicious in this week’s post.

I haven’t done a baking post in a while on Aimsy’s Antics, not since baking some super tasty banana muffins way back during lockdown 1.0. So, when I came across this delicious recipe I knew I just had to try it and share it with your guys.

A few weeks ago, I saw a recipe on Metro news for Biscoff spread flapjacks. The original recipe is from Fitwaffle Kitchen and was shared on their Instagram. Their flapjacks just look delicious and I wanted a piece of the action so have given their recipe a try.

Now, I have changed the number of ingredients to this to suit the baking dish I was using, but the basis of the recipe is just the same. Let me tell you these are just pure sweet heaven (if you have a sweet tooth).

Have you heard of Biscoff spread? If not, where have you been? It is just delicious and even more so when incorporated into a baking recipe. Biscoff spread is basically the contents of the Lotus Biscoff biscuits made into a delicious spread. It tastes just like the biscuits, with the caramel and cinnamon hints coming through. It is sweet but oh so delicious.

Biscoff spread flapjacks incorporate the yumminess of the Biscoff spread with the gooiness of tasty flapjacks. A winner in my books.
To make these delicious flapjacks, you are going to need the following items:

Please note, the ingredient amounts have been doubled to fill a baking dish of the size: 30cmx23cm (11″x9″ approx).

  • 600g Oats (rolled)
  • 300g Biscoff Spread – plus 120g for the topping
  • 300g Butter (unsalted)
  • 120g Light Brown Sugar
  • 300g Golden Syrup
  • 500g White Chocolate
  • Lotus Biscoff Biscuits

You will also need:

  • Baking dish measure 30cmx23cm
  • Greaseproof paper
  • Weighing scales
  • Large Saucepan
  • Spatula or spoon
  • Toothpick or skewer
  • Bane Marie (bowl over a pan of water)

Step 1 – Prepare the Baking Dish

Before making the flapjacks, you want to prepare the ingredients and baking dish. Use greaseproof paper to line the inside of the baking dish. This should make it easier to remove the flapjack once it is fully baked and set. I like to cut more greaseproof than needed and then trim once the flapjack is in the tray.
Then measure out all the ingredients ready to make the scrummy flapjacks.
You also want to pre-heat the oven, setting this onto Gas Mark 3 / 160°C.

Step 2 – Melt ingredients together

The first step is to melt the butter and sugar together. Make sure this is over low heat, as the butter can burn if too hot. Then add in the golden syrup and allow to melt into the mixture. Next add in the Biscoff spread, again allowing to melt. Gently simmer this until all is combined.

I made a slight mistake and used a frying pan, ideally, you want a large saucepan, as adding in the oats increases the volume of ingredients in the pan. So, add in the oats next, stirring in, until the wet ingredients have soaked and coated the oats fully.

Save the white chocolate and 120g of Biscoff spread for the topping.

Step 3 – Pour into Dish and Bake

When the flapjack base is ready, it is time to place this into the prepared dish. Spoon this in and spread the sweet oat mixture to fully cover the base of the dish. You may find it easier to spoon bits in at a time, as the saucepan can be quite heavy initially. Keep spreading the oat mixture until it is fairly even.

Then trim down the greaseproof paper, so that there is enough to be able to remove the flapjack, but not too much that may overhang and set alight in the oven. Trust me, you don’t want that happening!

Place the dish into the pre-lit oven, and bake for around 20 minutes to 25 minutes. I found that 20 minutes was enough in the fan-assisted gas oven, but adjust accordingly to match your oven.

Step 4- Allow to cool and add topping

When ready, remove from the oven and allow to cool down. I kept mine in the dish and placed it into the porchway, covered, as this is one of the coolest places in the house. This allowed it to speed up the cooling process. You can also place it into the fridge, however, just be careful if using a glass dish like mine and changing the temperatures too quickly. You don’t want the glass to crack and break…your delicious flapjacks would go to waste then!

When cool, it is time to make the topping. Start by placing a bowl over a simmering pan of hot water, making sure the water isn’t touching the bottom of the bowl. Then begin melting the white chocolate. Doing it this way helps to reduce the chocolate from sticking and burning. It may take a good 5-10 minutes to fully melt.

When the chocolate is nearly melted, it is time to place some Biscoff spread in the microwave. Melt this on short bursts of 30 seconds until the spread becomes runny.

Pour the melted chocolate over the flapjack base. Spread this out so it is as even as you can get it. Then drizzle on some of the melted spread. To create the marble/ripple effect, use a toothpick or skewer to create patterns in the topping.

Finish off the topping by adding on some Biscoff biscuits. I bought mine from B&M and they are slightly smaller in size. This dish fit in 15 of the Biscoff biscuits, which meant 15 portions of the flapjacks.

Step 4 – Cut into slices and enjoy

Once the topping has set and hardened, it is time to cut it into slices. Use a sharp knife and cut the flapjack. I found that cutting between the rows of the Biscoff biscuits made the slices as even in size as possible.
These Biscoff spread flapjacks are super sweet, so a small slice really does go a long way!

Once the flapjack is cut into pieces it is ready to enjoy. Give a few slices away to family and friends…they will love you forever with this sweet treat!
