
Another day, another recipe. Today’s recipe is delicious and garlicky! Lemon garlic chicken!
So, you may remember I had a tapas evening (forever ago) and have shared a few recipes from this night. Chorizo in red wine, Garlic Mushrooms and Steak Bites with Chilli Sauce. Well, today I am sharing another dish that was served up at the tapas night, with Lemon Garlic Chicken.
Lemon Garlic Chicken:
Again, this recipe has been adapted from my go-to Tapas Book which has a tonne of yummy recipes in to try. The basis of this dish is lemon and garlic cooked in with the chicken; however, be warned this has a lot of garlic in! 6 cloves to be in fact! You can reduce the amount of garlic in this dish if you find that this amount is too much for you. I love garlic (sorry for all those around) so I stuck to the 6 cloves. You also utilise a lot of of the lemon including the juice and rind to give this dish a nice citrus kick.

Ingredients:
- 1 Pack of Chicken breasts
- 6 cloves of garlic (finely chopped)
- 1 Onion (finely chopped)
- 2 Lemons – (the rind of one grated and the rind of the other finely chopped) as well as the juice from both.
- Olive oil
- 1 Tbs Dried Parsley
- Salt & pepper to taste
How to make Lemon Garlic Chicken:
You initially want to make sure you have prepared all of your ingredients. The preparation of the lemons takes the most amount of time to do. You have to grate the rind of one of the lemons, and then finely chop or pare the other lemon’s rind. Be careful with this as it can be fiddly.
To make the garlic process easier you could use a garlic press, however, I opted to chop this for this recipe. See which method you feel best suits you; you will still get the yummy garlic taste into the dish either way.
For the chicken, before you start cooking, you want to cut this down into strips. Again, to make this easier you could always purchase pre-cut chicken. I wish I had done this, as I hate cutting up chicken!


Step 1 – Cook the onion and garlic
Once all of your ingredients are prepared, select a frying pan and begin to heat up a tablespoon of olive oil. When the oil is nice and hot, add in your onion and cook until soft. Make sure you don’t brown them as this will alter the taste of the dish. Next, add in your garlic and cook for another 30 seconds or so; again be careful not to overcook or brown the garlic; as this will give the dish a bitter taste.

Step 2 – Add the chicken and cook
Now it is time to add in your chicken strips. Cook these gently and until it is tender and lightly browned. This can take between 5-10 minutes.

Step 3 – Add in the lemon
Once the chicken is cooked, you want to move all of the ingredients to one side of the pan. Then, add in the lemon juice and grated lemon rind into the empty part of the pan. During this time you want to allow the juice to bubble. Once it has bubbled for a short amount of time de-glaze the pan by scraping all of the bits from the bottom of the pan into the lemon juice.

Step 4 – Remove from heat and season
You can now remove the pan from the heat. Add in your seasoning of dried parsley, and any additional seasoning of salt and pepper. Do this to your preferred taste. Stir in to combine.
Step 5 – Serve and enjoy
Now, your dish is ready to be served into your chosen dish for you to enjoy. Before serving, sprinkle the finely chopped lemon rind over the dish for more lemony goodness. If you prefer a bit more lemon taste, cut up a few lemon wedges and squeeze over.


How easy is this dish? Super simple but tasty, and makes the perfect accompaniment to other tapas dishes. A tasty dish of lemon garlic chicken for you to enjoy.

I do like garlic but I’d probably use 2 cloves rather than 6 as I’m not that much of a lover as you, haha. This looks delicious though, and fairly quick and easy too. Perfect for a summer supper with a green salad and fresh bread – yum! Lisa x
Yeah 6 cloves are a bit much…no vampires will be coming near me (or anyone!) It would be perfect with a green salad and bread. Delicious!

Ooh this looks and sounds incredible! I’ve recently given up red meat so I’ve been looking for different chicken recipes because I’m eating more of it and don’t want to get bored! I’ll definitely be making this- yum!
